Commercial planetary mixers are the ideal general purpose machine. They are great for mixing, beating, whipping, batters, cake mixes and the occasional dough or pastry. They should never be used for more than occasional use as a dough or pastry mixer and then using 1st speed only. Continuous use of these machines as a dough mixer or using the wrong speed can cause premature wear and may void warranty.
Spiral mixers are machines made especially to mix all dough types, pizza, bread and short bread in commercial establishments.
Maximum capacities in all cases are based on dry bread flour and a MINIMUM of 55% water content. Overloading machines and/or using the incorrect speed can cause damage & will void warranty.
